Last Monday night, August 17, we picked the Pinot Grigio which is the first to be picked in all of Amador county! It was super hot so we picked at night while it was cool. We were fortunate to get the fruit in a day before all the smoke came in.
We held the juice in a refrigerated tank at 40° for two days. Interestingly enough, we take the Pinot Grigio fruit straight to the press - we do not take the stems off. By doing that, it creates channels for the juice to flow more freely. By not taking the time to de-stem, it also means we can get the fruit into the cold tank more quickly, thereby preserving the flavors and aromas of the juice.
