Zucchini Stuffed with Lamb

4 zucchini, 5-6" long
1tsp coarse salt
1tbsp olive oil
2 tbsp minced garlic
1 lb ground lamb or mutton
1/2 cup pine nuts
3 ripe tomatoes, chopped
1 tsp dried oregano
1 tbsp chopped fresh rosemary
1 tbsp chopped fresh mint leaves
1/4 cup dried currants
salt and ground pepper to taste
1/4 cup bread crumbs
1. Trim the ends off the zucchini. Cut in half lengthwise and scoop out the pulp, leaving 1/4" thick shell. Set the pulp aside. Sprinkle the inside of the shells with the coarse salt, and lay them, cut side down, on a towel to drain for 30 minutes.

2. Preheat oven to 350 degrees. Cover a baking dish with aluminum foil.

3. Heat the oil in a skillet over low heat and add the garlic. Saute until soft, about 3 minutes.

4. Add the lamb and saute until browned, stirring to break up the lumps. Then add the pine nuts, tomatoes, 1 cup of the reserved zucchini pulp, oregano, rosemary, mint, currants, salt and pepper. Stir and remove the skillet from heat.

5. Cut a think slice off the bottom of each zucchini shell so it will sit flat and place them on the baking sheet. Fill the shells with the lamb mixture. Sprinkle them with the bread crumbs and bake fro 30 minutes. 4 portions.
