THIS WEEK'S HIGHLIGHT & RECIPE:



Butte Mountain Farm and Humbug Farm have organically grown delicata squash! A delicious winter squash variety indigenous to North and Central America. They were famously introduced to the European settlers by the Native Americans. Here is one of my favorite recipes...
 




Baked Delicata Squash

Preheat oven to 400 degrees
9x13 pan


Ingredients:
(local and organic when you can)

1 Delicata Squash
1 Tbls of butter
1/2 cup grated cheddar cheese
1 Tbls of fresh or dried rosemary
1/4 cup chopped spinach or kale
(chives, garlic and onion optional)
salt and pepper to taste


Directions:

Just wash, slice squash in half and scoop out seeds. Then place butter, grated cheese, rosemary, and spinach or kale in center hole, add salt and pepper over the top and bake at 400 for 25-30 minutes or until cheese is golden brown. So delicious and nutritious!
