THIS WEEK'S RECIPE:

Baked Zucchini Spears

Easy, delicious and a good way to use those pesky zucchini!

(Gayla Chepourkoff - Resonance of Light)

Ingredients: 

(local and organic when you can)


6 med zucchinis
1/2 cup almond meal
1/2 cup coarsely shredded Romano cheese
1/2 tsp salt
3 tbsp fresh oregano leaves, chopped
3 tbsp fresh basil leaves, chopped
2 to 3 tbsp olive oil


Directions:

Cut off ends of the zucchinis, quarter them lengthwise, making spears. Put them in a bowl and toss with the olive oil. Mix the other ingredients together and toss with the zucchinis. Lay out on a baking pan and bake at 400 degrees for 15 minutes. Then broil for 5 to 10 minutes to brown. Eat hot or room temperature.
You can use any kind of squash, sliced patty pans, halved crook neck, larger zucchini sliced.  Enjoy!
