THIS WEEK'S RECIPE:

Stuffed Zucchini

Ingredients: 

(local and organic when you can)

2 medium sized zucchini (8”)

Stuffing:
1 piece boneless skinless chicken breast or 2 thighs
1 tbsp olive oil
1/2 medium onion
4 cloves garlic
1 c chopped Italian parsley, loosely packed
3/4 tsp fennel seeds
3/4 tsp salt
4 oz mozzarella cheese, cubed into 1/4 inch cubes
Sauce:
1 1/2 c chicken broth
1 1/2 c milk
4 cloves garlic, chopped
2 to 3 tbsp corn starch mixed with a little water
4 oz sharp cheddar (like Tillamook red) or Romano, coarsest grated


Directions:
1.) Cut zucchinis in half, scoop out centers (save centers for another use)
2.) Chop onion coarsely, put in a food processor, grind a little. Add garlic, parsley, fennel seeds grind to a medium texture. Sauté in a pan with olive oil until soft. Let cool a little.
3.) In the meantime, cut chicken into 3/4 to 1 inch cubes and grind in the same food processor. Put the ground chicken in a bowl, add onion mixture, salt and mozzarella cheese.
4.) Oil a baking pan, put in zucchini halves. Top with 1/4 of the chicken mixture each.
5.) Heat chicken broth, milk and garlic. Mix corn starch (or arrowroot powder) with a little water and stir into simmering broth. Turn off heat and add cheddar or cheese of your choice. Stir until melted.
6.)Smother zucchini with the sauce and bake at 350 degrees for about 45 minutes.
Extra sauce can be enjoyed over rice or used to dip French bread.
Enjoy!

Cooking for me is not an Olympic event. If you want to use pre-ground chicken or turkey, go for it. (I didn’t have any handy). If you want more sauce, add more liquids in the same proportions. If you have a huge zucch that got away from you, lay that sucker out in a big baking pan. Improvise! And have fun!
