The Mother Lode Exchange will be at Earth Day Amador 2019 from 11am-4pm this Saturday 4/27 at Detert Park in Jackson. It's going to be fun and educational for all ages. Don't worry the market will still be open that day too!
Earth Day Amador wishes to celebrate our foothills by showcasing those organizations and businesses who have developed earth-sustaining programs, philosophies or products. Also by offering participants opportunities to increase their knowledge of how to restore our planet's health and plan for the future as we work together for the common purpose of building a sustainable future.
THIS WEEK'S RECIPE!
Do you LOVE walnuts? We have delicious walnuts available at the market! Here is a great recipe for homemade walnut butter. A healthy alternative to peanut butter and with no artificial preservatives.
Cinnamon and Honey Walnut Butter
Ingredients: (organic and local when you can)
2 cups raw walnuts
1 Tablespoon salt 1 teaspoon coconut oil 1 Tablespoon honey (optional) 1/2 teaspoon of cinnamon (optional)
It is best to soak the raw walnuts overnight to make them easier to digest, this is due to the enzyme inhibitor they contain. Add raw walnuts and salt to bowl, cover with water, mix and let sit for 8 hours. Drain in colander. Place on baking sheet in oven at 150-200 degrees for 2 hours or until dry (or you can use a dehydrator). Add dried walnuts and coconut oil into food processor and mix. Add a pinch of salt, honey and cinnamon if desired.
Serve with apples, celery, on sandwiches, or even eat plain.
Store in glass container in refrigerator up to 3 months.
